Five, See Pink Elephants

Suffice to say this regional combo was delish.It went really well with the rich savory and fruity Junmai Daiginjo namagen from Gokyo. As for Gokyo.Let me just say that they make pretty much every style of sake under the sun, and do it well, mixing traditional and modern brewing techniques.

At the end of a recent online session of #tastewiththetōji, the guest brewery, Sakai Shuzo (Iwakuni City, Yamaguchi Prefecture) makers of the brand Gokyo (5 bridges) treated us to a little impromptu lesson on how to cook the region’s local delicacy Kawara Soba. The dish was created by the chef Shinichi Takase taking inspiration from an old legend that tells of an army cooking on burning Kawara (rooftiles) as they lay siege to Kumamoto Castle around the end of the 19th Century. The dish has become a firm favorite in its home of Kawatana Onsen. 

You can pretty much make this however you like but my version was chasoba, beef, spring onions, kinshi tamago (strips of egg), lemon, nori seaweed and a few drops of momiji oroshi.You basically dip the noodles in a broth made with ponzu. 

Sadly, I didn’t have any rooftiles going spare so I improvised with a similar looking dish.
