Ryusei Bangaihin

This sake breaks all the rules. First it throws out cereal and nutty notes of malt, steamed rice, oats and toasted almonds but then you get fruity notes of melon, apple and then you get a burst of umami and then something else, and something else and… every sip is a peek behind the veneer to discover that this is much more complex than it first displays.And therein lies the understatement of the century. An intricate sake that breaks every single rule in the book.It’s sublime, rough, profound, elegant, dainty and robust but still manages to stay superbly balanced and composed. This isn’t your ordinary sake, it’s a 5 course meal of Michelin quality. You don’t need food for this sake but this is sure to excel at the dinner table. Est 1863, Fujii Shuzo is located in the beautiful Takehara City which sits on the coast of the Setouchi Inland sea in Hiroshima. The city flourished in the trade of sea salt. There was once 23 breweries in the city many of whom were salt traders that began brewing as a winter side job. Only three remain today. The brewery is run by 5th generation Yoshifumi Fujii. The brewery brews a lot of their sake using the traditional kimoto starter method. Ryusei is the original brand that put them on the map when it won the national sake competition in 1907 and was revived by the current generation in the 70s.

A lot about this sake is undisclosed by the brewery.This is partly to add a sense of mystery but also because this is a blend of the final presses of 7 different unprocessed batches of that year’s sake, which this year includes Zenshichi, a junmai daiginjo modelled off that famous winning sake. The blend comprises a range of different polishing ratios:40%, 50%, 60% and 70% of this year’s blend is kimoto.The blend is different every year and compiled according to taste.
